Now that I have your attention, I will share with you the secret ingredient of this smart smoothie recipe — lecithin. Have you ever heard of it? If you’ve ever eaten eggs (including the yolks), sunflower seeds, fish, legumes, grape seed or wheat germ, then you’ve definitely had lecithin.
Lecithin is a wonderful component of these foods because it is mainly made up of a brainy substance called phosphatidylcholine. In fact, when it comes to chemistry, the word lecithin is even used interchangeably with phosphatidylcholine.
Why is it so brainy?
Lecithin is literally a component of the myelin sheath, the thin covering that layers our brain cells and spinal cord to protect them from damage. Not only that, but some studies have shown that one of the benefits of lecithin is to facilitate cell signaling, which means that it keeps your cells talking or communicating with each other to improve body functions.

But when exposed to high temperature, it turns completely liquid. Now just imagine what would happen to our body if our fats, or lipids, were subject to the slightest change in temperature. 1 cup almond milk
1 cup of fruit — fresh or frozen berries (any kind)
1 tsp lecithin granules (preferably from an egg source)
1 scoop of vanilla flavored whey protein powder
1 tbsp of flax oil
Add water or ice cubes to desired consistency.
Blend on high for a couple of minutes and voila! You have a delicious snack or small meal to start your day out right — smarter and healthier.
